#220 - #600 when the knife is very dull or has a damaged, chipped cutting edge #800 - #1200 for regularly sharpened, slightly dull knives #1500 - #6000 for final smoothing, polishing

Sharpening1. A few minutes before use, the stone should be soaked in water. Keep the stone wet while sharpening. 2. Set the stone firmly on the countertop. You can put a damp cloth or paper towel under the stone to prevent the stone from moving. The knife should be placed at an angle of 15-20 degrees to the stone. 3. Depending on the type of blade: - knife sharpened on one side - sharpen 90% on one side and 10% on the other side - knife sharpened on both sides - sharpen equally on both sides 4. After sharpening, remove burrs from the cutting edge. To do this, set the knife perpendicular to the stone and, maintaining this angle, gently move along the entire cutting edge, once on one side, once on the other side of the blade.   Maintenance The stone should be thoroughly washed and dried after use.
